Pancakes


These pancakes are simply perfect. They are thick, yet fluffy, with good flavor. This recipe is the one my mother used to make us pancakes growing up. It's not a secret recipe, in fact it just comes from moms old Better Homes and Gardens Cookbook. It's a great recipe that is simple to throw together with ingredients that are always in the house.

Pancakes:
1 1/4 c flour
3 tsp baking powder
1 Tbsp sugar
1/2 tsp salt
1 beaten egg
1 c milk
2 Tbsp oil

Sift together the dry ingredients (I just stir them). Add egg, milk, and oil to dry ingredients. Stir until most of the lumps are gone. Bake on a hot griddle. Makes 8 pancakes and can easily be doubled for more.
